Personal Pepperoni Pizza


Personal Pepperoni Pizza
Serves: 1

1 whole wheat tortilla 
2 Tbsp reduced-fat mozzarella
2 Tbsp shredded parmesan or parmesan/romano blend
10 slices Hormel® Turkey pepperoni
2 Tbsp Pizza sauce
1/3 cup sliced mushrooms
1/8 cup sliced onions
¼ cup sliced bell peppers
¼ tsp Italian herbs




1.      Preheat oven to 425°
2.      Place tortilla on baking sheet lined with parchment paper.
3.      Brush pizza sauce over surface of tortilla.
4.      Sprinkle cheeses on the pizza sauce
5.      Top with pepperoni, followed by mushrooms, onions and bell peppers.  Sprinkle with Italian herbs.
6.      Bake for 10 minutes or until edges are crispy.
7.      Enjoy!

Spaghetti and Meatballs

Spaghetti and Meatballs
Serves: 4
Leftover sauce and meatballs freeze beautifully.  Make the whole recipe so you can use the leftovers at another time.

Sauce:
1 Tbsp olive oil
1 cup diced onion
2 cloves garlic, minced
1/4 tsp Kosher salt
1/8 tsp black pepper
2 Tbsp tomato paste
28 oz can diced tomatoes -- more lycopene in canned
1/4 cup fresh basil, chopped

Meatballs:
1 lb ground turkey
1/4 cup minced onion
1 clove garlic, minced
2 tsp dried oregano
1/4 cup seasoned bread crumbs
1 egg, lightly beaten
1/4 tsp Kosher salt
1/4 tsp black pepper

8 ounces whole grain pasta (such as Barilla PLUS)

For the sauce:
Heat oil in a medium saucepan; add onion and garlic and cook for 7 to 10 minutes.  Season with salt and pepper.  Add tomato paste, diced tomatoes, and basil.  Reduce heat and simmer for 20 minutes.

For the meatballs:
Preheat oven to 375 degrees F.  In a bowl combine turkey, onion garlic, oregano, bread crumbs, egg, salt and pepper.  Mix gently to combine and form into meatballs.  Transfer to baking sheet lined with parchment paper and bake for 30 minutes.  When meatballs are cooked, add them to pot with sauce.

Cook pasta according to package directions, drain.  Serve pasta with meatballs and sauce.

"Ice Cream" Sandwich

Mock "Ice Cream" Sandwich

Ingredients:
Low-fat graham crackers
Fat-free whipped topping

Directions: Line a 9x12 baking dish with 1 layer of graham crackers broken into half sections.  Spray a dollop of whipped topping in the middle of the crackers.  Place another half graham cracker on the top, pressing to spread out the whipped topping.  Place in freezer for 30 minutes to an hour.  Enjoy!

Only 70 calories per "sandwich" depending on the type of graham crackers you use.

Turkey & Black Bean Burrito---Yum!


Turkey and Black Bean Burrito
Serves: 1

1 tsp canola oil                                  Pinch kosher salt or sea salt
4 oz. ground turkey breast                 1 tsp freshly squeezed lime juice
2 Tbsp diced red onion                      ¼ cup canned black beans (rinsed & drained)
¼ cup diced red bell pepper              1 (8 inch) whole wheat flour tortilla
¼ tsp chili powder                            ¼ cup mixed greens
¼ tsp cumin                                     2 Tbsp shredded low fat cheddar cheese
1 Tbsp barbecue sauce                       Hot Sauce or Salsa (optional)

1 Heat oil in a skillet over medium heat – add turkey meat and sauté until browned.
2 Add onion and pepper; season with chili powder, cumin, barbecue sauce, salt and lime juice.  Sauté for an additional 5 to 7 minutes.  Add beans and heat through.
3 Place turkey mixture in warmed tortilla, top with greens, cheese and hot sauce, roll up and enjoy!

Berry Blast Smoothie

Try this for breakfast sometime...

Berry Blast Smoothie (serves 1)
1 cup frozen mixed berries (we use blackberries and strawberries)
1/2 cup nonfat unflavored yougurt
1/2 cup orange juice
1 teaspoon Splenda
1 teaspoon vanilla
1/4 cup water

Place ingredients into a blender and blend until smooth.
Pour into a glass and enjoy!
